Our Coconut Ice Recipe xo

This month's staff pick recipe is for Coconut Ice and is from Lyn our mother hen in the Maiocchi office.

Lyn is Dee's Mum and she is known in the Maiocchi office as the queen of delicious cakes and sweet treats. Lyn also happens to be very handy and creative. She hand makes all of our Maiocchi brooches and badges. Lyn has picked out her favourite garden party recipe. This coconut ice recipe goes particularly well with cups of tea in fancy china and bite sized cucumber sandwiches.

Ingredients:

500g icing sugar

250g unsweetened dessicated coconut

1/2 cup condensed milk

one egg white

60g copha

Vanilla essence

Pink food colouring

Method:

Sift the icing sugar into a large bowl, add the coconut and mix through to combine.

Melt your copha and allow to cool slightly.

Whisk the egg white just a little. Add the egg and condensed milk to your dry ingredients. Then add your copha and a teaspoon of vanilla essence.

Mix until well combined into a firm mass.

Divide the mixture into 2, and colour one batch a pretty pink with your food colouring.

Press the uncoloured mixture into the bottom of a baking paper lined tin.

Smooth out with the back of a spoon, and then gently press the pink layer over the top.  

Refrigerate until set (about 2 hours).

Remove from tin and cut into bite size squares perfect for high tea.
